Open-Face Deli Melts

1 medium onion, halved and sliced
1 large green or red pepper, halved and sliced
3 Tbsp bottled creamy-style salad dressing
4 sliced bread
prepared mustard
1/2 pound sliced roast beef, ham, or turkey
4 slices Cheddar or Swiss cheese

In 1-quart casserole, cook onion and pepper, covered, on High 6 to 8 minutes until tender-crisp, stirring halfway through cooking. Drain; toss with salad dressing. Spread bread with some mustard; top with roast beef, then cheese. In 11x7" baking dish, arrange sandwiches; cook on High 2 to 4 minutes until cheese melts. Spoon some onion mixture onto each sandwich. Makes 4 servings.
