Glazed Almonds

2 Tbsp butter
1 Tbsp corn syrup
1/3 c sugar
1 c blanched whole almonds
1/2 tsp vanilla
1/4 tsp salt

Spread a 16" strip of aluminum foil on a baking sheet. Combine butter, corn syrup and sugar in a heavy skillet. Bring the mixture to a boil over medium heat, stirring constantly. Add the almonds and cook, stirring almost constantly for about 10 minutes, until the almonds are golden brown. Stir in the vanilla. Spread the nut mixture in a single layer on the foil. Sprinkle with salt. Cool and break into clusters of 2 or 3 nuts.
Makes 1 1/2 c glazed almonds.
