Cranberry-Orange Bread

2 c flour
1 c Quaker Oats (Quick or Old-Fashioned, uncooked)
3/4 c sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (optional)
3/4 c orange juice
2 eggs
1/3 c vegetable oil
1 Tbsp grated orange peel
3/4 c chopped cranberries
1/2 c chopped nuts (optional)

Heat oven to 350º. Grease and flour bottom only of 9x5" loaf pan. Combine first 6 ingredients, mixing well; set aside. Beat orange juice, eggs, oil, and orange peel until mixed thoroughly. Add to dry ingredients, mixing just until moistened. Stir in cranberries and nuts. Pour into prepared pan. Bake 60-70 minutes or until toothpick comes out clean. Cool 10 minutes; remove from pan. Cool completely.
