Shrimp in Cilantro Sauce

2 c firmly packed coarsely chopped cilantro
1 pickled jalapeno pepper, seeded
1/2 tsp salt
1/4 c olive oil
4 tsp fresh lime juice
1 Tbsp salt
1 lb large shrimp, shelled and deveined

Combine cilantro, jalapeno pepper and 1/2 tsp salt in container of food processor. Whirl until finely chopped. Add olive oil. Whirl for a few seconds until well blended. Pour sauce into a medium-sized bowl. Stir in lime juice. Cover and refrigerate.

Bring 8 cups water to boiling in large saucepan. Add 1 Tbsp salt. Add shrimp; cook about 2 minutes until pink and opaque. drain. Toss warm shrimp in cilantro sauce. Refrigerate until well chilled, 5 hours or overnight. Serve in shallow dish with wooden picks.
