Spiced Apple Cider

peel from 1/2 orange, cut into pieces
6 inches stick cinnamon, broken
1 1" piece of gingerroot, peeled and thinly sliced
1 tsp whole allspice
8 c apple cider or apple juice
1/4 c honey or packed brown sugar
cinnamon sticks (optional)

For Spice Bag, cut a double thickness of 100 percent cotton cheesecloth into a 6- or 8-inch square. Place orange peel, cinnamon, gingerroot, and allspice in center of cheesecloth and tie with a clean string.
Combine apple cider or juice and honey or brown sugar in a 3 1/2, 4- or 5-quart crockery cooker. Add spice bag to cider mixture.
Cover and cook on low setting for 5 to 6 hours or on high setting for 2 1/2 to 3 hours. Remove spice bag and discard. Ladle cider into cups. Garnish with fresh cinnamon sticks, if desired.
Makes 8 (8 oz) servings.
