Turkey Barley Soup
1 turkey carcass |
Break apart turkey carcass and place in a large soup pot. Add water, 1 c
onion, parsley sprigs, bay leaf, salt and poultry seasoning. Bring to a boil. cover, reduce heat and simmer 1 1/2 hours. Strain
stock and return to pot. Remove meat from carcass; set aside. Add remaining onion, carrots, celery and barley to stock. Cover and
bring to a boil. Reduce heat and simmer 45 minutes, or until barley is tender. Add tomatoes, reserved turkey and Tabasco. Heat to
serving temperature. Garnish with chopped parsley. Serves 6-8 |
