Escalopes De Veau

2 lbs. veal, cut in thin slices
1/2 c chopped onion
1 Tbsp butter
1/2 tsp salt
1/2 tsp pepper
3/4 c consomme
1/2 c dry white wine
1/4 c bread crumbs
1/2 c grated Swiss cheese

Sauté onion in butter until golden. Place in casserole, add veal slices, salt, pepper, consomme, and wine. Combine crumbs with melted butter and cheese and top casserole with this mixture. Bake, uncovered, in a preheated 350º oven for one hour.
Makes 4 servings.
