Cherry Merry Christmas Crunch

2 c walnut halves
1 c candied red and green cherries, cut in half
2 Tbsp butter or margarine
1 tsp maple extract
1/4 tsp cherry extract
1 tsp salt
2 c sugar
3/4 c light corn syrup
1/4 c maple syrup

Generously grease baking sheet. Combine walnuts, cherries, butter, extracts, and salt in medium bowl; set aside. Combine sugar, corn syrup, and maple syrup in heavy large saucepan. Bring to a boil. Cook over medium heat until mixture reaches 300º on candy thermometer (hard-crack stage). Remove from heat; stir in walnut mixture. Quickly pour onto prepared pan. Cool completely. Break into pieces. Makes about 2 pounds candy.

NOTE: Cherry Merry Christmas Crunch can be made up to 1 week ahead and stored in an airtight container.
